<p>The Ultimate LowCarb HighFat recipe, Mutton Liver Cheese Wraps !!!!!!!!</p>
<p>&nbsp;</p>
<p>Its a bit difficult for me in India to find a certain meat cut like pork chops or beef steak. So I have to think out of the box and try to make different recipes with the ingredients easily available to me.</p>
<p>The recipe is divided into two parts, don&#8217;t worry its not complicated at all.</p>
<p>1st part The Mutton liver.</p>
<p>Ingredients:</p>
<p>250 grams of mutton liver</p>
<p>2 medium sized onions, chopped</p>
<p>1 tbsp chilli powder ( You can get by with half a tbsp, I like it spicy  )</p>
<p>1/2 tsp turmeric powder</p>
<p>1/4 tsp freshly ground black pepper</p>
<p>1/2 tsp mustard paste</p>
<p>1/2 tsp coriander powder</p>
<p>dash of barbeque seasoning</p>
<p>3 tbsp ghee/coconut oil/ animal fat for cooking ( I used ghee )</p>
<p>salt as per taste</p>
<p>Procedure:</p>
<p>1) Pressure cook the mutton liver for 15 minutes so that it gets thoroughly cooked, if you don&#8217;t have a pressure cooker you simply boil the liver till it gets tender.</p>
<p>2) Take a pan and put it on high heat and once the pan is hot add ghee to it.</p>
<p>3) Once the ghee is hot add the chopped onion and stir fry them till they become transparent in color.</p>
<p>4) When  the onions are done, add the remaining spices and salt to it and cook them for 3-4 minutes. If you don&#8217;t find the spices I have used in your locality you can always use your local sauces such as soy sauce, Worcestershire sauce ( yup yup I googled for the spelling :-p ) or any kind of seasoning powder just to give the liver some taste.</p>
<p>5) Add the pre cooked liver to the pan and mix it well. Cook for another 10-15 minutes.</p>
<p>6) Once the liver and onion and spices are incorporated and cooked well turn the heat off and let the liver cool for a bit.</p>
<p>7) Smash the liver with a potato smasher or simply use your gifted hands <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /> till it becomes like a granulated paste and keep aside.</p>
<p>2nd part the Cheese:</p>
<p>Ingredients:</p>
<p>1 and 1/2 cup of grated cheese ( any processed cheese will do, nothing fancy required )</p>
<p>Butter/ ghee/ animal fat/ coconut oil for cooking</p>
<p>Procedure:</p>
<p>1) Put a pan on low heat and add a little butter to it</p>
<p>2) Sprinkle some of the shredded cheese on the pan to form a circular shape and let the cheese melt and set.</p>

<p>Yup Yup they look as they tasted&#8230;simply Yummy!!!!!! <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>
<p>Prawn Poppers are a welcoming change from your mundane LCHF snacks such as Almonds. Real easy to make, with less preparation time and if you have an electric deep fryer real fast to cook too and if you don&#8217;t have an electric fryer max 15 min in a deep dish pan for 500 grams of prawns.</p>
<p>Marination Ingredients:</p>
<p>500 grams of medium sized prawns</p>
<p>1 tbsp chilly powder</p>
<p>1 tsp coriander powder</p>
<p>1/2 tsp turmeric powder</p>
<p>1/2 tsp black pepper powder</p>
<p>1 tsp ginger garlic paste</p>
<p>1 tsp apple cider vinegar or 1 tsp lemon juice</p>
<p>Salt as per taste</p>
<p>Optional: You can add 1/2 tsp garam masala, 1/2 tsp chaat masala which will enhance the taste. All this if you can find this in an Asian store near you <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>
<p>Preparation:</p>
<p>2 medium sized eggs and 1/2 tsp barbeque seasoning for coating the prawns</p>
<p>Coconut oil to deep fry</p>
<p>Garnish:</p>
<p>Cream cheese or any kind of low carb dip you like</p>
<p>Procedure:</p>
<p>1) Mix all the ingredients mentioned above in the Marination section and let the prawns marinate in the mixture for 15-20 minutes.</p>
<p>2) Crack the eggs in a bowl and add the barbeque seasoning to it and mix well.</p>
<p>3) Fill the deep dish pan with coconut oil, enough for the prawns to get fully submerged in the oil.</p>
<p>4) Heat the coconut oil on medium to high flame.</p>
<p>5) Once the oil is hot, dip the prawns in the egg mixture and deep fry them.</p>
<p>6) Depending on the size of your pan and how many prawns you put in every batch, cook the prawns till they are golden brown in color which will approximately take 3-4 minutes per batch.   *Prawns cook really fast*</p>
<p>Serve with cream cheese or any low carb dip you like and munch on <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>
<p>They are tasty, healthy and satisfying. <p>Chocolate Butter Bomb Cupcake :</p>
<p>This recipe was just a mere tweak in one of my cupcake recipes but you guys lemme tell you it turned out to be a &#8221; bomb <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /> &#8221; Hence the title Chocolate Butter Bomb!</p>
<p>There are days when due to work load I get very little time to cook, so to keep myself on LCHF and not go off track as finding and ordering low carb food is a real challenge and also as I have a sweet &#8220;teeth&#8221; and  I am one of those with zero strong will, I keep some kind of LCHF, no sugar desserts around at all time.</p>
<p>There comes a day in everyone&#8217;s life when her/his hormones have the best of them. It was one of those days for me when I was hungry and was craving for something sweet. That&#8217;s how i stumbled upon this trick / idea with a little help from my very determined LCHF worshiper husband <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>
<p>I wanted something quick as I was in no mood to cook <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /> So I got the Almond Chocolate Cupcakes out of the refrigerator and I sliced the cupcakes into half right in the middle and warmed them up for 1 minute in the microwave. Got myself a nice chunk of salted butter too, to curb the hunger <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>
<p>All I did was place the chunk of salted butter in the middle of the sliced cupcake and let the warmth from the cupcakes melt the butter <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>
<p>* A chunk of butter is the only ingredient you need to add to my almond chocolate cupcake recipe <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /> *</p>
<p>Believe me it tasted not only amazing and sweet but it sufficed my hunger too :d</p>
<p>You LCHFer&#8217;s should really give this one a try for sure, highly recommended!</p>

<p>I keep craving for the indian chicken manchurian, so thought of giving it a try by making it the LCHF way <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /> I m purposely mentioning Indian Chicken Manchurian because authentic chinese chicken manchurian is not spicy, atleast the restaurants i tried it was mostly bland or less spicy and i love spicy food <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>
<p>It turned out really decent!</p>
<p>Recipe:</p>
<p>1 kg boneless chicken</p>
<p>500 grams spring onions chopped</p>
<p>1 onion chopped</p>
<p>7-8 tbsp coconut oil</p>
<p>2-3 tbsp soya sauce and oyster sauce ( i put a little extra as per my taste )</p>
<p>1 tbsp mustard sauce</p>
<p>1 tbsp schezwan sauce</p>
<p>1 tbsp green chilli sauce</p>
<p>1 tbsp red chilli sauce ( i put a little extra as per my taste )</p>
<p>1 tbsp apple cider vinegar</p>
<p>Salt and pepper as per taste</p>
<p>How to Marinate:</p>
<p>2 tbsp vinegar ( any vinegar will do )</p>
<p>1 tbsp soy sauce</p>
<p>Add the vinegar and soy sauce to washed chicken and keep it aside for 1 hr. This will help soften the chicken.</p>
<p>Procedure:</p>
<p>Take a deep fry pan and put it on high heat</p>
<p>Add the coconut oil to the heated pan and let the oil heat up</p>
<p>Once the oil is heated, add the chopped onion and let it cook till it becomes transparent</p>
<p>Add chopped spring onions to it and let it cook for 2-3 minutes</p>
<p>Add soy sauce, oyster sauce, apple cider vinegar, green and red chilli sauce, schezwan sauce, mustard and salt and pepper. Cook it for 2-3 minutes and then add the marinaded chicken</p>
<p>Keep stirring in between till all the water from the chicken evaporates and the chicken is thoroughly cooked. If the chicken cuts through with a spoon its done</p>
<p>Or simply eat and check if its done :-p</p>
<p>Serve hot <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>
<p>It will not taste as a typical indian chicken manchurian as i have not added any kind of flour, no sugar and no color to it. The carbs in this dish will only be the ones coming from the sauces. So to reduce the carbs you can vary the quantity of the sauces.</p>
<p>This recipe will serve 2-3 people easily <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>

<p>Beef Steak and Garlic Mushrooms <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>
<p>Finally decided to cook steak. I had never cooked steak before, as first of all its not allowed and second no one has a single clue on how to cook it. :-p But as I just simply love beef steak, after youtubing and googling a little I decided to  experiment with steak as well as mushrooms <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /> It tasted amazing. Garlic Mushroom turned out to be divine as they were cooked in steak juice and the garlic caramelised well <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>
<p>Ingredients:</p>
<p>2 pieces of beef steak around 1 inch thick</p>
<p>600 gms of mushrooms</p>
<p>10-15 cloves of garlic</p>
<p>1 tsp of mustard sauce, 1 tsp of schezwan  sauce, 1 tsp soy sauce, 1tsp oyster sauce, 1 tsp green chilly sauce, 1 tsp Worcestershire sauce</p>
<p>1 tbsp salted butter</p>
<p>salt and freshly ground black pepper as per your taste</p>
<p>10-12 tbsp of coconut oil</p>
<p>&nbsp;</p>
<p>Process:</p>
<p>Cooking the Steak:</p>
<p>Coat the steak with salt and pepper</p>
<p>Heat the pan on high heat</p>
<p>Add the oil of your choice ( I used coconut oil and eye balled the quantity so that the steak can be shallow fried )</p>
<p>Smash 4-5 cloves of garlic and add to the hot oil.</p>
<p>Add the steak to the oil and cook each side from 3-4 mins each as per your liking of doneness. I personally like it well done.</p>
<p>Add a little butter for taste.</p>
<p>Once you feel that the steak is done remove it from the heat and wrap it in an aluminium foil and keep it aside.</p>
<p>Cooking the Garlic Mushrooms:</p>
<p>I used 2 packets of mushrooms each being around 300 grams. Cut the stems of the mushrooms and cut the mushrooms into small pieces if they are big.</p>
<p>I used the left over oil of steak and added a little more oil.</p>
<p>Add 3-4 smashed cloves of garlic, if you don’t like garlic your going to miss out the sweet caramelised garlic in the end :-p</p>
<p>Add 1 tsp of mustard sauce, 1 tsp of schezwan  sauce, 1 tsp soy sauce, 1tsp oyster sauce, 1 tsp green chilly sauce, 1 tsp Worcestershire sauce ( I had to google the spelling of this sauce damn it’s difficult :-p but tastes amazing ) and stir fry in the hot oil on high heat.</p>
<p>Add the mushrooms to the pan and stir well in the sauces and oil.</p>
<p>Add freshly ground black pepper and salt to taste.</p>
<p>Remove the steak from the aluminium foil and place it on the serving dish.</p>
<p>Serve the hot mushrooms with the steak and enjoy <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>
<p>As far as carbs are concerned in this recipe its coming from the sauces. But the amount used it minute so it wont be high carb for sure <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>

<p>Tasted Fantabulous….I mean really they tasted delish <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /> You guys have to try this for sure. Especially people who miss bread..this is for sure going to satisfy that <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>
<p>Ingredients:</p>
<p>250 grams of almond flour ( almond meal )</p>
<p>around 9-10 tbsp of melted salted butter ( increase the butter quantity if needed, untill you get a pan cake batter consistency, eye ball it )</p>
<p>1 tsp baking powder</p>
<p>2 medium sized egg</p>
<p>stevia as per your taste ( you can skip it if you don’t like it , you can add chilli powder if you wanna make it spicy )</p>
<p>2 tbsp fresh milk cream</p>
<p>Process:</p>
<p>Mix all the above ingredients till you get a pan cake batter consistency.</p>

<p>Heat a non stick pan on a medium heat and add 1 tsp butter. Pour the batter with the help of a spoon and spread it as per your choice of shape. It should not be very thick nor very thin. Eye ball it you guys <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>

<p>The best LCHF dessert I’ve made to date <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>
<p>Almond Chocolate Cupcakes !!!!!!!</p>
<p>Ingrediants:</p>
<p>200 grams almond meal</p>
<p>100 grams real dark sugar free chocolate</p>
<p>50 grams dark chocolate for garnishing</p>
<p>1 tbsp baking powder</p>
<p>1 tbsp cocoa powder</p>
<p>80 grams butter</p>
<p>2 medium sized eggs</p>
<p>4-5 drops of vanilla essence</p>
<p>Process:</p>
<p>1) Melt the chocolate on a double boiler and mix it well with the almond meal, keep some of the chocolate aside for garnishing later.</p>
<p>2) Add the cocoa powder, baking powder, vanilla essence and melted butter to the mixture. (butter should be at room temperature otherwise it will cook the eggs in the batter itself, so melt it before you start the process )</p>
<p>3) Add the eggs to the batter and mix well. There should be no lumps. The batter should be medium thick not runny nor sticky hard.</p>
<p>4) Pre heat the oven to 170 deg C. Pour the batter into cupcake moulds or any mould you desire. Do not fill the mould upto the top as the batter will rise as it cooks. Cook for 25-30 minutes.</p>
<p>5) After 25 minutes check the cupcakes by poking a knife and if it comes out clean the cupcakes are done or else keep them for a little while longer.</p>
<p>6) Poke some small holes in the cupcakes with a tooth pick and pour the melted chocolate on the cupcakes, depending on how much chocolate you like.</p>

<p>Its really simple, fast and a delicious recipe if you can find a good quality sugar free chocolate <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /> For me it turned out really moist and its was so tempting I made one more batch the very next day.</p>

<li>1/2 kg fresh paneer ( paneer = fresh milk curd cheese)</li>
<li>1 cup boiled peas ( I boiled the peas with 1/2 tsp of salt added to the water )</li>
<li>1 large chopped onion</li>
<li>1/2 tsp mirchi powder ( mirchi powder = chilli powder )</li>
<li>1/4 tsp  haldi powder ( haldi powder = turmeric powder )</li>
<li>1/2 tsp jeera (jeera = cumin seeds )</li>
<li>pinch of hing powder ( hing powder = Asafoetida powder ) optional</li>
<li>chopped dhaniya leaves ( dhaniya leaves = fresh coriander )</li>
<li>1/4 tsp kaali mirchi powder ( kaali mirchi powder = black pepper powder )</li>
<li>salt as per your taste ( I used around 1 and 1/2 tsp )</li>
<li>3 tbsp pure desi ghee</li>

<p>Process:</p>
<p>1) Heat the pan or wok you are cooking on high heat and add ghee to it. Once the ghee is hot add the cumin seeds. Once the cumin seeds start popping add the chopped onion. Cook the onion till it becomes light pink in color.</p>
<p>2)  Lower the heat of the pan and add chilli powder, turmeric powder, black pepper powder, asafoetida powder, salt and mix well so that all the spices are infused into the ghee and onion.</p>
<p>3) Crumble the paneer blocks and then dunk the crumbled paneer in the pan along with the boiled peas. Add a few coriander leaves and keep some for garnishing in the end.</p>
<p>4) Add salt as per your taste buds <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /> mix well and let it cook on low heat for 5 &#8211; 10 mins, depending on how much water the paneer releases while cooking. Keep stirring in between so that it doesn&#8217;t stick to the pan. Once the water has evaporated take the pan of the heat and serve the paneer with peas hot and garnished with coriander leaves and a lemon slice <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>

<p>Being on LCHF in India is difficult, as to find the right meat cut at a decent value is nearly impossible. And having NON-LCHF, VEGETARIAN in-laws sometimes calls for a vegetarian dish. Hence the Paneer and Peas Upma <img src="http://i0.wp.com/theprimalgeek.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" data-recalc-dims="1" /></p>
<p>You can try different variations with this particular dish as anything and everything goes well with paneer.</p>
<p>Alternative for peas: Bacon bits, Chopped sausages, carrots, crushed pork rind etc.</p>
<p>Alternative for ghee: butter, pork fat, beef fat etc</p>
<p>Alternative for paneer: Alternative for paneer, all I can think of is tofu which I hate so I don&#8217;t eat. I am going to try this recipe with scrambled eggs and see if it works. Let me know if you have better options.</p>
